Black Bean & Avocado Brownies
Black Bean and Avocado Brownies

Ingredients:
- 2 flax eggs (2 TBS flax meal to 3 TBS water)
- 1/2 of a large ripe avocado
- 1 tablespoon melted coconut oil
- 1/2 cup unsweetened cocoa powder plus 1 tablespoon
- 1/2 teaspoon baking powder (without aluminum)
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoons pure vanilla extract
- 1/2 cup pure dark maple syrup)
- 1/3 cup unsweetened chocolate chips + 2 tablespoons for topping
Directions:
Combine all ingredients in blender. Blend until smooth. Pour into greased or parchment-lined pan. Bake 45 minutes at 350 degrees. Cool before cutting.
