Black Bean and Avocado Brownies

Ingredients:

  • 2 flax eggs (2 TBS flax meal to 3 TBS water)
  • 1/2 of a large ripe avocado
  • 1 tablespoon melted coconut oil
  • 1/2 cup unsweetened cocoa powder plus 1 tablespoon
  • 1/2 teaspoon baking powder (without aluminum)
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoons pure vanilla extract
  • 1/2 cup pure dark maple syrup)
  • 1/3 cup unsweetened chocolate chips + 2 tablespoons for topping

Directions:

Combine all ingredients in blender.  Blend until smooth. Pour into greased or parchment-lined pan. Bake 45 minutes at 350 degrees. Cool before cutting.
